Waste Managment - Does portion size matter?

The amount of consumer generated food waste from the food stalls at Roskilde Festival has not yet been quantified, as the food waste is not sorted at the consumer site. However, there is a concern from Roskilde Festival that there might be a problem with the amount of food waste from the festival guests. 


The aim of this project is therefore to examine the amount of food waste generated by festival guests at four chosen food stalls and to investigate the guests’ interest in having the option of different portion sizes. The food stalls Giant Burger and Mega Pita are chosen as they are the only two stalls at the festival with large portion size concepts. In addition, Halifax is chosen as a stall with a regular size burger concept (geographically located close to Giant Burger), and Italian Street Treats is chosen as a stall with a regular size meal concept (geographically located close to Mega Pita). 


The amount of food waste from the food stalls with large portion size concepts will be compared to the amount of food waste from food stalls with regular portion size concepts. The food waste will be quantified by weighing the leftovers from randomly selected guests at the chosen food stalls and the interest for portion sizes will be investigated by conducting a survey among these guests. After collection of data during the festival a report will be prepared with the essential findings and future recommendations for the festival in relation to food waste and portion sizes. 

 

The students found that they could not measure a significant larger amount of waste connected to the big portion food stalls. The graph shows the willingness of the guests at the different food stalls to choose between different sizes when buying a meal. This results encourages the food stalls around the festival to consider doing different portions of meals to generate less waste.
